White Fish with Roasted Tomatoes

Even a redneck fish like a Trigger Fish can be turned into an Italian delicacy!

White Fish with Roasted Tomatoes

2 filets of trigger fish (or any flaky white fish like snapper)
1 can diced tomatoes
2 cloves garlic, chopped
1/2 small white onion, diced
Salt and pepper
EVOO
Garlic powder

Preheat oven to 425. In a small ovenproof dish, combine tomatoes, onion, and garlic. Season with salt and pepper. Roast in oven for about an hour. After almost all of the juices have absorbed and veggies are soft, add about 2-3 Tbls EVOO and simmer another 15 minutes or so in oven. Meanwhile, during last 15 minutes of cooking, heat a skillet with enough EVOO to cover bottom over medium-high heat. Season filets with salt, pepper and garlic powder. Cook in oil on both sides until cooked through, about 3-5 minutes on each sides, depending on thickness of filets. Serve with tomato mixture on top, all over risotto.
