Secret family recipe...shhh, don't tell anyone! ;-) My husband hates all potato salad and anything with mayo in it, except for this recipe. Not your average potato salad.
Mom's Potato Salad (my way)
Serves about 6-8
7 new potatoes
8 eggs
1/2 white onion, very finely diced
About 3-4 whole kosher dill pickles, diced
About 1/4 cup juice from pickle jar
About 1/4 cup light mayonnaise
Seasoning salt
Place potatoes and eggs in a large pot and cover with cold water. Heat to a boil and cook until potatoes are cooked through. The best way to tell is stick a fork in one and pull it out of the water. When the potato slides off the fork, they're done. The eggs will also be done. Remove from heat, drain water and cool to room temperature with cold water. Peel HALF of the potatoes, leaving the other half with skins on (but removing any knots or dark spots). Dice all potatoes and put in a large bowl. Pour pickle juice over potatoes and stir. It should be just enough pickle juice for the potatoes to absorb. Peel and slice eggs. Add to potatoes and stir together. Add diced onions and pickles and stir to combine. Add mayonnaise. I don't really care for mayo so I add only enough to hold everything together. Mix it all together well and season with seasoning salt. Let chill in refrigerator until cold, about 1-2 hours.
