Summertime Grilled Chicken

An alternative to boring grilled barbeque chicken. I served it with cornbread, grilled corn on the cob and potato salad. Yea for summer!!

Summertime Grilled Chicken
4 pieces chicken (I used boneless, skinless breasts because that's what I had but use whatever pieces you like)
3 cups lukewarm water
1/4 cup kosher or sea salt
1/4 brown sugar
1/2 onion, rough chopped
4-5 cloves garlic, smashed or rough chopped
1/4 cup lime juice
1 mango, sliced
2-3 Tbls course ground pepper

Place chicken in large ziploc bag. Dissolve salt and sugar in a water. Pour over chicken, along with the rest of the ingredients. This technique is called brining and is similar to marinating. Let the chicken sit in brine about 2-2.5 hours. Remove chicken and pat dry with paper towels. Brush with olive oil on all sides and grill. Serve hot topped with cool mango salsa.

Mango Salsa
1 mango, diced
1 avocado, diced
1/2 onion, finely diced
1/4 green bell pepper, finely diced
Juice from 1/2 lemon or 1 whole lime
Salt and pepper

Mix all ingredients in a bowl and let flavors combine for about half an hour before serving. The lemon juice will keep the avocado from browning.
