This dish came from just looking in the refrigerator for what I had on hand after church last Sunday. It was quick, easy and who doesn't love goat cheese?? My sister always says that she loves my one dish pasta meals. I call them fridge clean-out meals. Turned out quite delicious, enjoy!
Chicken, Radicchio and Goat Cheese Pasta
About 3/4 lb chicken tenders or breasts
1/2 onion, diced
1 clove garlic, minced
1 head radicchio, cut in thin strips
1 15oz can petite diced tomatoes
4oz goat cheese
3/4 lb short pasta, like fusilli/rotini
Salt and pepper
2 Tbls EVOO, plus 1
In a large skillet, heat about 2 Tbls EVOO over medium-high heat. Pat chicken dry with paper towel and season with salt and pepper on both sides. Cook chicken thoroughly in oil, until the outside is browned and inside is cooked to 180. Remove from pan and set on a cutting board to rest. Reduce heat to medium and add 1 more Tbls EVOO. Add garlic and onion to pan and saute until slightly softened. Add radicchio and tomatoes and simmer about 10-15 minutes until veggies are soft. Meanwhile, cook pasta al dente according to package. Shred chicken with hands or 2 forks and add to the sauce. Add goat cheese and stir to incorporate. Season to taste with salt and pepper. Drain pasta and add to sauce in pan, reserving some of the pasta water in case you want to thin out the sauce a little.
